Why You’ll Love This

Thanksgiving, Christmas, Cookouts, Potlucks or Pitchins, this Southern Creamed Corn Casserole is your answer to “what should I bring”? It goes great with Turkey or Ham. It’s a little sweet and a little salty. It’s nice and cheesy but with the awesome crunch of crispy bacon.

And, being made in your crockpot or slow cooker, it travels extremely well! And it you are hosting a holiday meal at your home, making this in your Crock Pot frees up oven space and stove space for other dishes!

If you need to feed a larger crowd, it also is super easy to double!

I’m always on the lookout for a good Corn Casserole side dish during holiday meals or family get-togethers. It seems like someone will always bring some variation of one. We’ve made a couple of my favorites here on Bubba Pie:

Crockpot Corn Casserole

I’ve always loved Corn Casserole. It is sweet, has a nice crispy crust on top and is both rich but not too filling. It is one of my favorite side dishes. So, it was only a matter of time before we shared this Slow Cooker Corn Casserole Recipe that makes things easier than ever. Here is what you will need:

  • FROZEN CORN – We use frozen corn in this recipe. Simply prepare it according to the directions on the package and it’s ready to go. You can use fresh or canned corn. Read below for details.
  • EGGS – Gives this casserole it’s firmer texture and helps it set.
  • FLOUR – Any all purpose flour will work.
  • SUGAR – Helps the sweet corn give this dish it’s delicious taste! Works great with the salt and the cheese!
  • BUTTER – Melted. Salted or unsalted will work fine.
  • MONTEREY JACK CHEESE – We think this cheese works great in this dish. But feel free to switch it up with some cheddar, cheddar jack, swiss or pepper jack for a little kick. Or, try a blend of a couple of them!
  • SALT AND PEPPER – To taste.
  • BACON – Cooked extra crispy and chopped. We suggest thinner bacon instead of thicker bacon, which helps it get nice and crispy. If you don’t have bacon, you can use diced ham.
  • PARSLEY – Optional. For Garnish.

Can You Use Canned or Fresh Corn For This Recipe?

Yes. You sure can. Just make sure to drain the canned corn well before using. If using canned or fresh corn, there is no need to cook it before adding it to the recipe.

How To Store Leftovers

Keep leftovers in an airtight container in your refrigerator for up to 4 days. Corn Casserole reheats just fine in the microwave.

Can You Freeze Corn Casserole?

This dish freezes well. After it cools, wrap it tightly in freezer wrap, freezer bags or both. It should be good for up to 3 months in your freezer. Make sure to label and date the package. Better yet, divide the portions into serving sizes before freezing.

Notes, Tips and Variations

I love how this is a pretty straight-forward recipe. And you are only getting two dishes dirty, your food processor and your Slow Cooker! Here are a couple tips and variations if you want to mix things up.

  • Watch It!-All Crock Pots are a little different. How quickly they heat up and cook your food can vary. This is a recipe where you really don’t want to overcook and burn the sides of the dish. Keep an eye on it! You’ll know it’s done when the center is still a bit jiggly but you can put a toothpick in and it comes out clean.
  • Add Heat– Add some canned green chilis to this dish for a little heat. Or put in Pepper Jack Cheese. The sweetness of the corn and the heat are a great flavor combo! And it will make this dish a little different than the rest!
  • Sour Cream– Put a couple of dollops of Sour Cream on top of your mixture right before cooking. Don’t mix it it in. This will add some texture and creaminess to your dish. Or you could use Greek Yogurt to trim some calories.
  • Double Recipe – This dish is super easy to double if you are feeding a larger crowd.
  • Too Much Condensation? – You may get a lot of condensation on the underside of your Slow Cooker Lid. This may delay in your casserole setting properly. To fight this, simply lay a paper towel or two under the lid. You can replace with a fresh/dry one as needed.

This Crockpot Corn Casserole is SUPER easy to make and comes out creamy and delicious. This classic side dish is perfect for the Holidays or even any occasion.

Ingredients

  • 2 12- ounce packages frozen corn
  • 2 eggs
  • ¼ cup flour
  • 2 tablespoons sugar
  • 2 tablespoons salted butter melted
  • 1 cup shredded Monterrey jack cheese
  • Salt and pepper to taste
  • 5 slices bacon cooked and chopped
  • Dried parsley for garnish

Instructions

  • Prepare one package of frozen corn according to package instructions.

  • Place the cooked corn in the bowl of a food processor and pulse until creamy. Add the eggs, flour, sugar, and melted butter and pulse to combine.

  • Grease the bowl of the slow cooker with nonstick cooking spray and add the corn mixture to the bowl. Add the other bag of frozen corn and the shredded cheese. Season with salt and pepper. Stir to combine all the ingredients.

  • Place the lid on the slow cooker and cook on low for four hours or high for three hours.

  • When the casserole is cooked, garnish with chopped bacon and dried parsley before serving.
